Cicadas: The US chef cooking up the insect ‘flavour bombs’

Billions of cicadas – bugs that spend nearly their whole lifecycle under floor – have emerged within the jap US after spending 17 years underground. It is prime time for Brooklyn based mostly chef Joseph Yoon, who specialises in cooking with bugs.

“Why aren’t we consuming what two billion different folks already devour on the earth?” he says.

This is why the self-described ‘edible insect ambassador’ promotes the usage of insect protein in American diets by way of his group, Brooklyn Bugs.
